Serafino Cabernet Sauvignon

Serafino Cabernet Sauvignon is from the McLaren Vale wine region in South Australia, roughly 35km south of Adelaide. The McLaren Vale region is famous for their wines, making the climate there great for growing lovely grapes for their famous dry red wines. The region has dry warm weather, with normal rainfalls and rarely has any drought or frost, making it ideal for growing grapes.

Serafino Cabernet Sauvignon has won many awards. In 2002, it won the Australian Cabernet of the Year in the Winestate Wine of the year awards. In 2004, it was awarded Best Cabernet Advertiser top 100. In 2006, it won the “Bushing King” Trophy. In 2007, it was voted Best Cabernet in the Advertiser Top 100.

Look

When poured in a wine glass, it shows a vibrant colour, and has the the mark of a vintage wine. The Serafino Cabernet Sauvignon wine has a clear look, with a deep red colour with purple hues, almost a ruby red colour.The wine bottle itself has class.

The front of the wine bottle is has a black label with gold borders. The Serafino brand writing in gold plating font. It carries the red Serafino logo on the front of the label, giving it a distinct look.

We have photos of the 2012 vintage, with current vintage now being 2014 (as at September 2016).

The back of the wine bottle shows the tasting notes of the wine, and has the signature of the of the Winemaker Charles Whish and the Serafino Director Maria Maglieri.

Smell

When you put your nose over the wine glass, you can smell the beautiful aroma. The first sniff gives a lot of fruity aromas, which you can smell the black cherry, blackberries and blackcurrants. As you whirl the wine a few times, you can smell the ripe red fruits, eucalypts, black olives tapenade, red capsicum and mint salsa.

Taste

As you drink the wine, you can literally taste the quality, as the wine is so well structured. In the mouth it is full bodied, dry and powerful.The long even ripe palate is filled with rich flavours, dark fruit, black olive tapenade, blackcurrants and a gentle spice character, all enhanced by firm tannins and perfectly integrated French and American oak.

The rich cabernet fruit flavours provide a long even palate with deep red berry blackcurrant fruit flavours by tight spicy integrated oak. Fresh raspberry, blackberry and wild herb garden; dark chocolate, meaty, bold, roasted flavours.

The finish is has a lingering flavour to it, being long and dry, with an even tannin finish and a hint of spices. An elegant, beautifully balanced wine with a long lingering finish, silky and smooth. The flavours linger with the even tannin finish.

About the Wine

The cabernet sauvignon has 14% alcohol, 8.3 standard drinks in a 750ml wine bottle. pH 3.56 and TA 7.1g/L. Made in Australia with their Cabernet Sauvignon grapes sourced from their McLaren Vale vineyard from Serafino’s Little Road and Malpas Road blocks. It has preservative 220 and contains sulfites. No animal products are used in their winemaking, so vegan friendly.

The Winemaker is Charles Whish, and below is his tasting notes for the cabernet sauvignon: “Once destemmed the grapes are fermented in small 4 tonne open fermenters. The temperature and extraction are monitored over a 7 day fermentation period. Tannin and colour extraction is achieved through regular pump overs of the fermentation cap. The wine is then pressed and allowed to finish the malolactic fermentation prior to spending up to 1 year in new and 1 year old French and American oak hogs heads.”

Together with his father Giovanni, he planted his first vines in McLaren Vale, laying the foundation of a family legacy that today is known as Serafino Wines and is overseen by his daughter Maria Maglieri.

Serafino Cabernet Sauvignon is sourced from our estate grown vineyards, situated in the heart of McLaren Vale. This full bodied wine displays ripe Cabernet varietal aromas, while the palate is densely packed with blackcurrant and dark fruit flavours. The integrated French and American oak seamlessly extend the length of this wine and enhance its fine grain tannins. Savour and enjoy this beautifully balanced wine from McLaren Vale.”

Serafino Vineyard

The Serafino Vineyard was first started by Serafino Maglieri, back in 1968. However, before this time, it all started in the late 1950s, when his father Giovanni Maglieri was working in Pirramimma, also in McLaren Vale. When Serafino was 17 years old in 1963, he joined his father Giovanni in the vineyards. This was when Giovanni and Serafino bought 50 hectares of woodland in McLaren Vale, with the intent of clearing the lands to grow grape vines.

Serafino first started as a Cellarhand, picking and pruning grapes. He worked his way up the ladder and started to plant his first vines to build his first winery, which is now the famous Serafino Vineyard.

The McLaren Vale region was picked by Serafino because of the great climate for growing grapes. There is rarely any frost or drought in the region, making it ideal for winemaking. The soil is rich, with plenty of sunshine for the grapes during growing season. The rainfall is always ideal for keeping the vineyards healthy every year.

Serafino Vineyard has now expanded to 300 acres in the McLaren Vale region. Their winery has a Cellar Door, Restaurant and accommodation. They also do functions and conferences, including weddings.

The Cabernet Sauvignon grapes are sourced from their Little Road and Malpas Road blocks. The grapes are destemmed and cold soaked on skin for 24 hours. The cold soak starts the process of building brightness and depth of flavours. The wines are then fermented on skin in the huge open fermenters, where the yeast starts to eat the sugars to make alcohol. The main huge fermentation is done for roughly 10 days, where there is regular cap punching of pushing the top of the wine down into the huge fermenters to mix everything up. Then there is the daily  pump overs where the the wine is pumped over the top of the wine to mix everything up. Both these processes helps get more flavours and colour out of the grapes, and into the wine. After roughly 10 days when the main fermentation is finished, the sediments is all filtered out and they begin to put the wine into French and American oak hogsheads 300 litre sizes, where it matures for roughly 10 months.

These days, the Serafino Winery is being run by Serafino’s daughter, CEO Maria Maglieri. She is more than capable, as she has been awarded the South Australian Business Ambassador in 2006, and in 2010 she was nominated the Telstra Business Woman of the year. In 2012, she was named the Molisana Business Woman of the World in Italy. In her guidance, she leaves the winemaking to her Winemaker Charles Whish.

Serafino Wines is located on Kangarilla Road, McLaren Vale South Australia. Since the Serafino Winery started making wines, they have won many awards for their Cabernet Sauvignon. It’s a delight to drink, and highly recommended.
